We usually just head to our favorite Chinese BBQ place and buy a pound of char siu along with some roast duck.<\/p>\n<p>Sometimes though, ok, actually quite often, we&#8217;re living in a place without a great Chinese BBQ master, and then you need to take matters into your own hands. Luckily, unless you&#8217;re trying to make a whole crispy roast pork or a brace of ducks, a home oven is all you need to make some great Chinese BBQ.<\/p>\n<p><strong>This is a quick and easy char siu aka Chinese BBQ pork recipe.<\/strong> It\u2019s essentially the same as <a href=\"https:\/\/iamafoodblog.com\/make-best-darn-ever-chinese-bbq-pork-aka-char-siu\/\" target=\"_blank\" rel=\"noopener noreferrer\">this one here<\/a>, minus the red fermented tofu because we don\u2019t actually have any in the fridge. Pork \u2013 usually pork butt\/shoulder &#8211; is marinated in a sweet and savory BBQ sauce and then roasted. It\u2019s sweet and salty and has just some nice complexity thanks to five spice. In fact, when you go to a real Chinese BBQ place, they often ask you, \u201cfei ding sau\u201d (\u80d6\u6216\u7626) which translates to fat or skinny. Truthfully they usually only use pork butt at Chinese BBQ places, but even then, there will be leaner and fattier parts on a pork butt. If you want:<\/p>\n<ul>\n<li><strong>a more luscious, rich char siu<\/strong>\u00a0&#8211; \u00a0use pork butt<\/li>\n<li><strong>tender, lower calorie, leaner char siu<\/strong> &#8211; use pork tenderloin<\/li>\n<li><strong>a leaner, cheaper char siu<\/strong> &#8211; \u00a0use pork loin<\/li>\n<li><strong>the best char siu you\u2019ve ever eaten<\/strong> &#8211; use pork collar aka pork neck. Other than that you need honey, garlic, ginger, five spice, and a pork butt\/shoulder.<\/p>\n<h2>Char siu ingredients<\/h2>\n<ul>\n<li><strong>Hoisin sauce<\/strong> &#8211; They pretty much sell hoisin everywhere now, from Target to your basic grocery store. It\u2019s a thick, sweet brown sauce that\u2019s used in marinades and as a dipping sauce. Hoisin is super flavorful: sweet and savory, tangy, and full of umami. It\u2019s essential for Chinese bbq dishes.<br \/>\n<strong><\/strong><\/li>\n<li><a href=\"https:\/\/iamafoodblog.com\/shaoxing-wine\/\"><strong>Shaoxing wine<\/strong> &#8211; This is the secret ingredient that all your Chinese food needs to taste like restaurant style Chinese food.<\/a> Shaoxing wine is rice wine and while it\u2019s optional for this recipe, it\u2019ll be 10 thousand times better if you get it. It\u2019s more fragrant, delicate, and floral.
