I just love it when the sun breaks through the rain clouds. I love how you can see every rain drop, in crystal clarity. The streets are shiny and slick and the sky gets bright, the wind pushing\u00a0the clouds away to make room for the blue sky that was always there. To be honest, I&#8217;ve been feeling just a bit down. I could blame the rain and maybe a bit of seasonal affective disorder, but it&#8217;s probably just the fact that I&#8217;m just a touch disillusioned with\u00a0social media. It&#8217;s so easy to get sucked into the hole: that blatant, non-nuanced, black and white world of numbers.<\/p>\n<p><img class=\"alignnone size-full wp-image-16111\" src=\"https:\/\/iamafoodblog.com\/wp-content\/uploads\/2016\/09\/IAM_2213.jpg\" alt=\"iam_2213\" width=\"1450\" height=\"968\" srcset=\"https:\/\/iamafoodblog.com\/wp-content\/uploads\/2016\/09\/IAM_2213.jpg 1450w, https:\/\/iamafoodblog.com\/wp-content\/uploads\/2016\/09\/IAM_2213-600x401.jpg 600w, https:\/\/iamafoodblog.com\/wp-content\/uploads\/2016\/09\/IAM_2213-1024x684.jpg 1024w\" sizes=\"(max-width: 1450px) 100vw, 1450px\" \/><\/p>\n<p>I&#8217;m trying to stay away and stay positive. After all, I am a lot more than my instagram account, even if sometimes I feel like I live and die by the numbers \u2013 I feel like Mike can relate to <a href=\"https:\/\/www.instagram.com\/p\/BLh0cg1gjt1\/?taken-by=overheardla&amp;hl=en\" target=\"_blank\" rel=\"noopener noreferrer\">this<\/a> just a little too well. I actually have other interests aside from food, even though it doesn&#8217;t feel like it sometimes. He loves ordering black bean beef chow mein\u00a0when we get takeout Chinese, which sadly for him (and me!) isn&#8217;t that often. This\u00a0guy whips up in a flash and is\u00a0so, so good. It&#8217;s basically a giant crispy noodle cake topped with saucy beef, peppers, and onion. What&#8217;s your go to order?<\/p>\n<p><iframe loading=\"lazy\" src=\"https:\/\/player.vimeo.com\/video\/184807652\" width=\"640\" height=\"360\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\" autoplay=\"0\"><\/iframe><\/p>\n<blockquote class=\"recipe\"><p><strong itemprop=\"name\" class=\"recipename\">Black Bean Beef Chow Mein Recipe<\/strong><br \/>\n<span itemprop=\"recipeYield\" class=\"yield\"><em>serves 4-6<\/em><\/span><br \/>\n<time class=\"preptime\" datetime=\"PT30M\">prep time: 5 minutes<\/time><br \/>\n<time class=\"cooktime\" datetime=\"PT30M\">cook time: 20 minutes<\/time><br \/>\n<time class=\"totaltime\" datetime=\"PT30M\">total time: 25 minutes<\/time><\/p>\n<ul>\n<li><strong itemprop=\"recipeIngredient\" class=\"ingredient\">1 pound steak of choice, sliced thin<\/strong><\/li>\n<li><strong itemprop=\"recipeIngredient\" class=\"ingredient\">1 tablespoon soy sauce<\/strong><\/li>\n<li><strong itemprop=\"recipeIngredient\" class=\"ingredient\">1 tablespoon sake or Shaoxing wine, optional<\/strong><\/li>\n<li><strong itemprop=\"recipeIngredient\" class=\"ingredient\">2 teaspoons cornstarch in the beef<\/strong><\/li>\n<li><strong itemprop=\"recipeIngredient\" class=\"ingredient\">1 teaspoon sesame oil<\/strong><\/li>\n<li><strong itemprop=\"recipeIngredient\" class=\"ingredient\">1\/2 teaspoon white pepper<\/strong><\/li>\n<li><strong itemprop=\"recipeIngredient\" class=\"ingredient\">2 tablespoons oil<\/strong><\/li>\n<li><strong itemprop=\"recipeIngredient\" class=\"ingredient\">16 oz fresh chow mein\u00a0noodles<\/strong><\/li>\n<li><strong itemprop=\"recipeIngredient\" class=\"ingredient\">1 onion, sliced<\/strong><\/li>\n<li><strong itemprop=\"recipeIngredient\" class=\"ingredient\">1 green pepper, sliced<\/strong><\/li>\n<li><strong itemprop=\"recipeIngredient\" class=\"ingredient\">1 tablespoon black bean sauce<\/strong><\/li>\n<li><strong itemprop=\"recipeIngredient\" class=\"ingredient\">1 tablespoon oyster sauce<\/strong><\/li>\n<li><strong itemprop=\"recipeIngredient\" class=\"ingredient\">1 cup water<\/strong><\/li>\n<li><strong itemprop=\"recipeIngredient\" class=\"ingredient\">2 teaspoons cornstarch whisked with 2\u00a0tablespoons water<\/strong><\/li>\n<\/ul>\n<p><span itemprop=\"recipeInstructions\" class=\"instructions\">In a bowl, marinate the beef slices with the soy sauce, sake or wine, corn starch, sesame oil, and white pepper. Set aside while you prep the onion and green pepper.<\/span><\/p>\n<p><span itemprop=\"recipeInstructions\" class=\"instructions\">Rinse the noodles well with hot water and drain. In a wok, or large skillet, heat up the oil over medium high heat. When hot, add the noodles in a thin, even layer. The goal is to fry the noodles into a giant crispy noodle cake. If needed, do this is batches. When the underside of the noodles are golden brown and crispy, flip and continue to crisp, adding oil as needed. When the noodle cake is crisp, remove from the wok\/pan and move to your serving dish.<\/span><\/p>\n<p><span itemprop=\"recipeInstructions\" class=\"instructions\">Add a touch of oil to the wok and add the steak, cooking on high. Let brown and sear, tossing as needed. Remove from the pan, or push to the side of the wok, away from the intense heat of the bottom. Add the onions and green peppers on high heat, tossing often, until the onions are translucent, but not brown.<\/span><\/p>\n<p><span itemprop=\"recipeInstructions\" class=\"instructions\">Add the black bean and oyster sauce, as well as the water. Bring to a simmer over medium to high heat. Slowly drizzle in the cornstarch whisked with water. Bring to a simmer to thicken the sauce, stirring often. Taste and adjust seasonings. Scoop the sauce onto the noodle cake and serve immediately, being sure to get both crispy\u00a0noodles and sauce into your bowl!<\/span><\/p><\/blockquote>\n","protected":false},"excerpt":{"rendered":"<p>Sometimes Mike and I go out for late night Chinese take out.
